Our Story

Rooted in patience,
crafted with care

Local Roots Kombucha was born from a simple belief: that the best things in life can't be rushed. What started as weekend experiments in a home kitchen has grown into Vista's own small-batch kombucha brewery — and we're just getting started.

Every batch is fermented the old way: with real tea, organic sugar, a living SCOBY, and whatever fresh fruit our local farmers are bringing to market that week. No shortcuts. No artificial flavors. Just time, temperature, and a little bit of faith.

We opened our tasting room so you could taste the difference that patience makes — and maybe share a bottle or two with your neighbors.

Source & Blend

We start with loose-leaf tea, organic sugar, and whatever seasonal fruit is calling to us from the local markets. Every batch begins with intention.

First Ferment

The tea and fruit meet our SCOBY — a living culture that transforms sugar into something complex, effervescent, and alive. This takes days. Sometimes weeks.

Bottle & Carbonate

A touch of fresh fruit goes into each bottle for secondary fermentation. The natural carbonation builds slowly, giving every sip its characteristic sparkle.

Share & Enjoy

We bottle, label, and bring it to you — at our tasting room, local shops, and farmers markets around North County. Drink it slowly.
